In this chapter we discuss one of the most particular, noble and interesting products of the Veneto Region, the Chioggia Radicchio.
The Chioggia Radicchio is one of the excellence of the Veneto Region, and one of the most characteristic and curious products of the province of Rovigo. Friezed with the IGP brand, acronym for Protected Geographical Indication, a European recognition assigned to those products grown and processed in a specific area, from which they derive their decisive characteristics.
Also the son of the most famous Treviso radicchio, it stands out for its spherical and very compact shape, with large and rounded leaves, of an intense red color.
Called by the Chioggiotti "Radicio de Ciosa" in their dialect, it is considered the most savory of all the cultivated ones. It takes its name from the place that gave it fame, the city of Chioggia, one of the most beautiful and fascinating cities of the Venetian lagoon, also known as "Little Venice".
The Chioggia Radicchio IGP is also grown in other municipalities in the provinces of Padova, Rovigo and Venice, and exported all over Europe thanks to its characteristics. This is a typicality of ancient traditions, as was reported in the monthly notebook of the Federal Credit Institute for the Risorgimento delle Venezie in March 1923, praising the cultivation technique of radicchio obtained in the Venetian gardens.
It is produced in the types of "early" harvest between the months of April and July and the "late" harvest between September and March. A slightly bitter and crunchy vegetable, which is mainly eaten raw, but which reserves pleasant surprises on the palate even when it is lightly cooked and accompanied in different types of recipes.
