In this chapter we discuss one of the excellences of the Veneto Region, with an intense red color, the Radicchio Rosso from Verona.
Radicchio Rosso from Verona, typical of the province of Verona, is one of the tastiest and most characteristic typical products of the Veneto region. Its origins derive directly from the Radicchio Rosso from Treviso although, it is distinguished from this by its more rounded and slightly shorter appearance.
In particular, this variety of radicchio has an elongated oval shape, with rounded leaves that close in autumn to form a compact bud.
The latter, in particular, are characterized by a beautiful bright red color and completely white ribs.
Radicchio Rosso from Verona stands out for its particular taste, where the bitterness of the leaf contrasts with the sweetness of the ribs, creating a delicate and crunchy consistency. In the kitchen, being versatile, it is used in various ways: from salads to risotto, up to being sautéed directly in the pan. Harvesting begins in October and continues until February.
